Chef Ohashi was born in Tokyo, where more than 3,000 Ramen restaurants continue to engage in fierce competition.

He personally visited thousands of ramen restaurants all over the world, and started to think about making his own ideal ramen noodles overseas.

AS general way to learn how to cook ramen is to work at ramen restaurants. However, since most of the ramen restaurants purchase noodles from noodle factories, most do not know how to make noodles and can teach one kind of ramen noodle keeping the important part of the recipe a secret. Therefore, in order to learn many kinds of ramen properly from scratch, chef Ohashi joined a ramen school run by the most famous ramen critic in Japan.

Ramen noodle schools are a relatively new concept for the ramen industry. The school recruited many chefs from the best ramen restaurants as instructors. The school teaches not only how to cook many kinds of ramen noodle by the best ramen restaurants, but also how to develop an original ramen noodle with locally grown ingredients. Chef Ohashi graduated at the top of the school.

In 2016, he moved to the Netherlands and started developing ramen noodle using local ingredients. In 2018, he finally succeeded in developing his ideal ramen noodle, and opened Ramen Ohashi in The Hague.

How to eat Ramen

The most important part of Ohashi’s Ramen is the soup. We spend a large amount of time on the soup. Firstly, we would ask you to taste only the soup with a spoon.

The best way to eat ramen is with the noodles, broth and toppings all together.  So when you pick up the noodles, add some of the toppings too. We are proud that all of the toppings, broth, and noodles are home cooked. The noodles have been made by hand.

The noodles are in the broth, so they will absorb soup and gradually become mushier.  For an optimal, most delicious noodle texture, eat the noodles as soon as possible.  Sometimes, we cannot serve ramen noodles to your friend or family member at the same time.  We would like you not to wait for them and start eating in that case.
